Thyme is a village within a village: Caryn Hibbert’s family took the Southrop Manor Estate, a working Cotswold farm, and turned its cottages, stables and lambing sheds into 31 bedrooms, a restaurant, a spa and a cookery school without moving a single wall out of character. Weddings take the whole estate. The 16th-century Tithe Barn is the ceremony and dining room, stone walls and open roof timbers, with the Ox Barn restaurant for the long table and the Baa Bar, built into the old lambing sheds, for the part of the night nobody remembers. The Meadow Spa and the walled gardens fill the day between. The honest constraint is scale. A seated wedding breakfast here runs 60 to 80 guests, with about 100 for a standing reception, so this is a place for a whole weekend with the people you actually know rather than a 200-guest party. The estate sleeps roughly 62 across its cottages and houses, which means most of your guest list can walk to breakfast.
