Rosewood London occupies a Belle Epoque building of 1914 on High Holborn, built as the Pearl Assurance headquarters, and it is the rare London hotel with a courtyard: guests drive through a stone arch off the street into a private square, which solves the arrival problem every city wedding has. Inside, the Grand Ballroom takes 200 for a reception with room for staging, a band and a proper dance floor, and the foyer outside it has a pair of staircases rising to a balcony that turns the entrance into the event. Smaller counts use Sir George, reached by the Grand Marble Staircase cut from a single block of Italian marble, or the Mirror Room. The kitchen builds menus rather than selling packages and works with certified kosher and specialist South Asian caterers, which is why a good share of London’s multi-day weddings run here. Central London is the trade-off you are buying: no grounds, no view, and a licence and noise curfew set by the borough, in exchange for guests who can walk from Covent Garden and an airport an hour away.

Queen Victoria wrote in her diary in 1873 that she had never seen a lovelier or more romantic spot, and the view from Inverlochy has not changed: Ben Nevis behind, the castle’s own loch in front, gardens and woodland on all sides. The baronial mansion was built in 1863 by the third Baron Abinger, a couple of miles from the 13th-century ruin it takes its name from, and it has run as a five-star hotel since 1969 with a Relais and Chateaux membership and three AA rosettes for the dining rooms. Weddings run at two sizes. The Great Hall, with its frescoed ceiling, Venetian chandeliers and the staircase everyone photographs, takes up to 80 guests, and the drawing room holds 60 for something smaller. Dinner is served in one of three dining rooms furnished with pieces given by the King of Norway. Couples who want the place to themselves take exclusive use of the whole hotel. This is the Highlands proper, so build the day around Scottish weather rather than against it: the wet-weather plan is the plan.

Michael Caines spent two years turning a Grade II listed Georgian house above the Exe estuary into the hotel he had wanted to run since he left Gidleigh Park, and Lympstone Manor opened in 2017 with a Michelin star inside its first year. There are 21 rooms and suites, six shepherd’s huts along the treeline, 28 acres of grounds and a vineyard of around 17,500 vines planted on the slope down to the water. Weddings work on exclusive use: from three in the afternoon on arrival day to eleven the next morning, the whole property is yours, all three dining rooms, the bar, the pool house and the gardens. Ceremonies are held in the bay window of the Berry Head room for up to 60 guests, or in Mamhead for up to 25 looking over the estuary. Sixty is the seated ceiling and 100 for the evening; a marquee on the lawn takes up to 300, and that route requires exclusive use. The food is the reason people book, so give the kitchen a proper run at the menu rather than treating it as catering.

Inverness airport is half an hour away, which is the practical argument for Aldourie over the more remote Highland castles. Rates are published by the letting agents rather than the estate: from about £33,000 including VAT per night on a three-night minimum, full board for 24.
